Hash Browns and Green Peppers
Fresh Veggies and Dip

We all know we should eat plenty of vegetables. Some of us, however, have a hard time getting those worked in during the day.

Fresh raw vegetables with dip work out great at cook outs. The vegetables can be cut ahead and the dip whipped up and chilled. Just set out the platter or serving tray, and everyone can munch healthy while other foods are being grilled.

Vegetables are also delicous grilled. Almost any vegetable can be grilled, although different techniques work better for some veggies than others. A vegetable like zucchini can be cooked right on the grates or threaded on shish kabobs. Green peppers and onions can be quick fried in a cast iron skillet on top of the grill or cooked on a grill griddle. Frozen vegetables can be bundled in hobo packs.

My boys especially love grilled potatoes. OK. Those may not be best put in the vegetable category. They sure are good though. The easiest way to do potatoes on the grill is in tin foil packs. They are also great parboiled, tossed in sauce and cooked directly on the grates.
